LCHF Appetizers are Keto Friendly

LCHF appetizers for the holiday season are in the air . . . the sights and smells of Christmas are drifting around.  The menu plans are developing and how will I make them keto friendly, I ask myself? How will you stick to the keto diet this holiday season?

I found some tips that are very useful, not just for the holidays but for anytime.  The bottom line, you must have a commitment and set your mind to it.  Mind over matter! You must make a plan and follow through with it.

LCHF Appetizer ideas and a recipe

A lot of appetizers are LCHF (low carb high fat) based on the ingredients they call for. And what I am finding is that what you serve with a dip could be challenging; it needs to be low carb and keto friendly.

Fresh vegetables or vegetable chips are great options.  Devilled eggs, dill pickles and olives, cheese cubes and cubed meat sticks are all good ideas.  Other options include shrimp cocktail, jalapeno poppers, fat bombs, cheese ball bites, and bacon wrapped cocktail sausages all fit into the keto friendly group.  Meatballs with a low carb sauce could be another idea.

Jalapeno Popper Cheese Balls are one of my personal favourites.  They are quick to assemble and can be made ahead.

Ingredients:

4 ounces of full-fat cream cheese at room temperature

1/4 cup unsalted butter or ghee at room temperature

4 slices of bacon

1/4 cup grated Gruyere cheese or Cheddar cheese

2 jalapeno peppers halved, seeded and finely chopped

Instructions:  In a bowl, mash together the cream cheese and butter or ghee, or process in a food processor until smooth.  Preheat the oven to 325 F.  Line a rimmed baking sheet with parchment, leaving enough space between so they don’t overlap.  Place the  sheet in the preheated oven and cook for 25 to 30 minutes, or until crispy.  The exact amount of cooking time depends on the thickness of the bacon slices.  Remove from the oven and set aside to cool.  When cool enough to handle, crumble the bacon into a bowl and set aside.To the cream cheese and butter mixture add the cheese, jalapeno peppers, and bacon grease.  Mix well and refrigerate for 30 minutes to 1 hour, or until set.  Divide the mixture into 6 balls and place them on a parchment lined plate.  If serving immediately, roll them in the crumbled bacon until well coated.  If serving later, refrigerate without the bacon in an airtight container for up to 1 week.  Roll the balls in bacon right before serving.

Enjoy! These mini cheese balls are delicious and have a hint of heat too!
